Today marks the 16th year of The September 11 attacks (also referred to as 9/11) were a series of four coordinated terrorist attacks by the Islamic terrorist group al-Qaeda on the United States on the morning of Tuesday, September 11, 2001. The attacks killed 2,996 people, injured over 6,000 others, and caused at least $10 billion in infrastructure and property damage. As former President Barack Obama stated on Twitter today:
We remember everyone we lost on 9/11 and honor all who defend our country and our ideals. No act of terror will ever change who we are.
Today is not a day for harsh words for politics. Today is a day we remember and send love to all the families that lost someone on this day. Since my website is about food and recipes. I post below a Vanilla Cupcake Recipe.
2 1/2 cups all purpose flour
2 cups sugar
3 tsp baking powder
1 tsp salt
1 cup milk
1/2 cup vegetable oil
1 tbsp vanilla extract
2 large eggs
1 cup water
1/2 cup shortening
4 cups powdered sugar
1 tsp vanilla extract
5-6 tbsp milk
Preheat oven to 350°F and prepare a cupcake pan with liners.
Add the flour, sugar, baking powder and salt to a large mixer bowl and combine. Set aside.
Add the milk, vegetable oil, vanilla extract and eggs to a medium sized bowl and combine.
Add the wet ingredients to the dry ingredients and beat until well combined.
Slowly add the water to the batter and mix on low speed until well combined. Scrape down the sides of the bowl as needed to make sure everything is well combined.
Fill the cupcake liners about half way and bake for 15-17 minutes, or until a toothpick comes out with a few moist crumbs.
Remove the cupcakes from oven and allow to cool for 2 minutes, then remove to a cooling rack to finish cooling.
To make the frosting, combine the powdered sugar and shortening in a large mixer bowl and mix until smooth.
Add the vanilla extract and 1 tablespoon of milk and mix until smooth.
Add remaining milk as needed and mix until smooth.
Pipe the frosting onto the cupcakes.
