 What’s New For 2018 ?

Well as I’m sure you have noticed, we changed our website a bit and did a name change. I decided that 2018 is going to be my year for everything new and exciting. Plus I have noticed ( with a little help) that there are a few sites now with the same name and almost my same exact theme 🙁

Since I’m not like anyone else, my website isn’t going to be either. I decided to add a little flavor and change things up a bit! Hope you enjoy the new changes.

Tasty Stuffed Meatloaf

This recipe is probably one of the most popular in my house. If you notice in the pictures that it seems as there is way more than 2 lbs of meat, you’re right!

I had to make 2 meatloaves, one for my house and another for my son lol. So yes, you can double this recipe if you need to make more.

Prepare stuffing as per box instructions and set aside.  In a large bowl add all ingredients for meatloaf and mix well making sure it is all together.

Lay out a piece of wax, parchment paper , or plastic wrap ( the size of a small cookie sheet )  Take the meatloaf and place meatloaf on the paper. Now form the meat an inch smaller than the paper making a rectangle ( or as close to a rectangle you can get )

Take the stuffing and spread on top of the meat.

Roll in a jelly roll style. Carefully take the meat and lay it in the pan ( rolled end side down)

Sauce: In a small saucepan, add the ketchup, vinegar and brown sugar. Mix together. Continue to mix on low heat until sauce thickens and begins a slow bubble. Take the sauce and cover the meatloaf.

 

Bake at 350 F for about 70 minutes, making sure it is fully cooked. Take from oven and let sit for about 10 minutes before serving.

Ingredients
  • 2 pounds extra lean ground beef
  • 1/2 pkg onion soup mix
  • 1 box stove top stuffing
  • 1 tablespoon Worcestershire sauce
  • 1 large egg beaten
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup milk
  • 1 cup breadcrumbs
Sauce
  • 1/2 cup ketchup
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
Instructions

You can experiment with different fillings instead of stuffing, for example:
