Meringue Pie Shell
- 3 large egg whites
- 1/8 teaspoon cream of tartar
- 3/4 cup sugar
- 1/2 teaspoon vanilla
Preheat oven to 275 F
In a stand mixer, add egg yolks and cream of tartar and mix at high speed until soft peaks form
Gradually sprinkle in sugar ( 2 tablespoons at a time), beating after each addition 2 minutes or until sugar is dissolved completely about 15 minutes.
Add vanilla and beat until stiff peaks form.
Spoon mixture into a greased 9 inch pie plate, smoothing in center. Pile high on sides to create a shell
Bake for 60 minutes or until crisp and light brown. Turn off oven, open just a crack and let sit in the oven another 60 minutes.
