Lazy Man’s Ravioli

 

Scramble-fry ground beef, onion, mushrooms and garlic in large non-stick frying pan until no pink remains in beef. Drain. Return to frying pan.

Add next 11 ingredients. Stir. Bring to a boil. Cook, uncovered, until thickened.

Combine next 7 ingredients in small bowl. Mix. Cook noodles in boiling water second amount of salt and cooking oil in large uncovered pot or Dutch oven for 14 to 16 minutes, stirring occasionally until tender but firm. Drain. Rinse with cold water. Drain well.

Arrange layers in ungreased 4 quart casserole or small roaster as follows:

  1. 1/2 of beef mixture
  2. 1/2 of noodles
  3. All of spinach mixture
  4. All of mozzarella cheese

Cover and bake in 350F oven for about 45 minutes. Serves 6

Ingredients

  • 1 1/2 lbs Lean ground beef
  • 1 1/2 cups Chopped onion
  • 1 1/2 cups Coarsely chopped fresh mushrooms
  • 1 Garlic clove, minced
  • 5 1/2 oz Can of tomato paste
  • 7 1/2 oz Can of tomato sauce
  • 1 cup Hot water
  • 1 tbsp Beef bouillon powder
  • 1 1/2 tsp Parsley flakes
  • 1 1/2 tsp Dried sweet basil
  • 3/4 tsp Granulated sugar
  • 1/4 tsp Dried whole oregano
  • 1/4 tsp Dried thyme
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 10 oz Frozen chopped spinach, cooked and squeezed dry
  • 1 Large egg, fork - beaten
  • 1/3 cup Dry bread crumbs
  • 1 tbsp Parsley flakes
  • 1 cup Grated medium or sharp Cheddar cheese
  • 1/8 tsp Garlic salt
  • 1/8 tsp Ground nutmeg
  • 8  Lasagna Noodles, broken in half
  • 16 cups Boiling water
  • 1 tbsp Salt
  • Cooking oil
  • 1 cup Grated part-skim mozzarella cheese
