Now that the holidays are over and I have had a little rest from cooking big meals. I thought I would try and make a healthier version of Lasagna rolls, Healthy Turkey Lasagna Roll Ups. I have been eating better so far this year, watching my calories and eating less sweets. I have been also trying to take my dishes that I usually make and thinking of ways to make them healthier.

I made these rolls with boneless, skinless turkey breast. You can use chicken as well but when I went to the store I couldn’t believe the how high the cost of chicken is. Are chickens now on the endangered species list? is there a shortage? I went to one of the cheaper grocery stores and for 2 small / medium chicken breast was $ 19.02. I decided I was getting turkey instead lol. I also used turkey bacon instead of regular bacon, broccoli and mushrooms. These rolls were delicious

 

 

 

Bechemel with Parmesan

Warm milk until steam begins to rise. Do not let it boil. Remove from heat when it starts to simmer. Add Parmesan and set aside.Melt butter over medium heat, add flour. Mix to form a paste. Continue stirring until it starts to bubble. Remove from heat.

 

Slowly add milk/cheese mixture and whisk until smooth. Remove from heat when it has reached the thickness you want it to be. Add salt and pepper to taste.

Preheat oven to 350F. Cook sliced bacon on cookie sheet in oven until cooked really well. Turn heat off and leave bacon in oven so it drys out. Remove from oven and set aside.

Preheat oven to 375F. In your food processor: Add the broccoli and pulse until chopped really well. Chop mushrooms into thin slices. In your skillet, add mushrooms and broccoli with 2 tbsp olive oil. Saute until soft. Set aside

 

Add the meat mixture to the vegetable mixture.

Add Italian seasonings, salt and pepper. Mix.

Add 2 cups of the cheese and mix. Add 1 cup of sauce and mix all together. Add a tiny bit of sauce to the bottom of the pan so the noodles don’t burn. Take a lasagna noodle and lay flat. Add vegetable / meat mixture to the noodle. I add it to the center of the noodle, and from top to bottom. Leave about 1 inch at the bottom without mixture.

Roll up and place into the pan with the end down that had no mixture. Continue to do this with the rest of the rolls until you have used all the mixture. Add the remaining sauce over top of all the rolls. Cover with the rest of the mozzarella cheese. Crumble the bacon into bits, and sprinkle on top of the cheese.

Cover with foil and bake for 20 minutes. Remove from heat and let sit about 10 minutes. Serve

Ingredients
Bechemel with Parmesan
  • 3 cups whole milk
  • 6 tablespoon flour
  • 3 tablespoon butter
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup grated parmesan
Lasagna Rolls
  • 2 boxes cooked lasagna noodles you won't use 2 boxes, but I always cook 2 boxes because they always tear.
  • 2 pounds boneless, skinless turkey or chicken breast cooked and shredded
  • 1 teaspoon Italian seasoning
  • Salt and Pepper to taste
  • 4 cups Mozzarella cheese grated and divided in half
  • 1 cup mushrooms
  • 1 pound turkey bacon cooked well
  • 2 heads broccoli crowns finely chopped
