Classic Caesar Salad Recipe

This Classic Caesar salad is all made from scratch. Once you taste it, you will swear a professional made it. The lettuce fresh and crisp, the croutons freshly made and the dressing tastes Magnifico ! This is the perfect starter or side dish. Just add grilled chicken and you have a meal.

This can all be made ahead of time. The only thing you will have to do is mix it together!

Course: Salad
  • 1 large head romaine lettuce fresh
  • 1 clove garlic halved
  • 1/2 cup salad oil I use corn oil
  • 1 cup french bread cubes fresh, 1/2 " and crusts removed
  • 3/4 tsp salt
  • 1/4 tsp black pepper freshly ground
  • 1/4 tsp dry mustard
  • 1 1/2 tsp Worcestershire sauce
  • 3 anchovies drained and chopped
  • 1 egg
  • 2 tbsp Parmesan cheese freshly grated
  • 2 tbsp lemon juice 1/2 fresh lemon
  1. Prepare romaine lettuce by washing and drying thoroughly and placing separated leaves in plastic bag and storing in refrigerator for several hours . Be sure you have trimmed the core and discarded any wilted or discoloured leaves. 

  2. Several hours before serving, in a jar with a tight fitting lid, crush half a garlic clove and combine with oil. Refrigerate at least one hour

  3. Heat 2 tbsp oil-garlic mixture in skillet. Add bread cubes and saute until brown all over. Set aside

  4. To, remaining oil-garlic mixture in jar, add salt, mustard, pepper, Worcester and chopped anchovies. Shake vigorously. Refrigerate

  5. In a small saucepan, bring 2 inches of water to a boil.Turn off heat. Carefully lower egg into water. Let stand 1 minute, then lift out. Set aside to cool

  6. Just before serving; rub the inside of a large wooden bowl with the other half of the garlic clove. Discard the garlic. 

  7. Cut out coarse ribs from large leaves of Romaine. Tear into bite size pieces into salad bowl. 

  8. Shake dressing and pour over lettuce

  9. Sprinkle lettuce with Parmesan. Toss until all leaves are coated with dressing 

  10. Break egg over centre of salad ( just the yolk) 

  11. Pour lemon juice directly over egg, toss really well

  12. Sprinkle with croutons and toss quickly again. Serve immediately

This salad will go great with your Thanksgiving Turkey Dinner !
