The Chocolate Brownie Bomb

First  you are going to need some brownies. Here is my recipe for Chocolate Fudge Brownies. Then using plastic wrap to line a 6 cavity muffin pan, set aside.

Using the round cookie cutter, cut a circle into brownie. Flatten out the circle  and then press into the bottom and up the sides of the lined muffin cavities. Do this to all 6 of these.

Using a cookie scoop. Place ice cream into the center of each brownie bowl, then use a spoon to make a well into the middle of the ice cream. Place a tablespoon of Hazelnut Chocolate Spread ( like Nutella). Now make sure the ice cream covers the chocolate spread. Freeze for at least 30 minutes.

Using a smaller round cookie cutter, Cut out 6 more circles from the brownie. Flatten them slightly and nicely press on top of the ice cream.  Make sure all of the ice cream is covered. Wrap the plastic wrap tightly around each bomb ( I added more plastic wrap, covering each of them super tightly and moulded into balls Freeze at least 4 hours.

Chocolate Shell:

Place chocolate chips and the coconut oil in a microwave safe bowl. Microwave 30 seconds at a time,  until smooth and melted.

Cool completely, then add Skor bits.

Stab a skewer into a brownie bomb

Dip it into the bowl of melted chocolate and make sure the whole brownie ball is covered. Allow excess chocolate to drip off. Place onto a wax paper lined baking sheet and repeat until done.

  • 1 9 x 13 pan brownies recipe link below
  • 1 pint vanilla ice cream
  • 6 tablespoons Chocolate Hazelnut Spread
Hard Chocolate Shell
  • 2 cups semi sweet chocolate chips
  • 1/2 cups coconut oil
  • 1/2 cup Skor bits
